Ingredients

  • 2 pieces Firm pears
  • 500 ml Red wine (dry, like Merlot or Cabernet Sauvignon)
  • 75 grams Granulated sugar
  • 1 piece Cinnamon stick
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Fresh thyme
  • 1 piece Baguette
  • 2 tablespoons Olive oil
  • 100 grams Blue cheese (such as gorgonzola or Roquefort)
  • 2 tablespoons Honey

Directions

Step 1

Peel the pears, cut them in half, and core them using a spoon. Set aside.

Step 2

In a medium saucepan, combine red wine, sugar, cinnamon stick, vanilla extract, and half of the fresh thyme. Heat over medium heat, stirring until the sugar dissolves.

Step 3

Place the pears in the saucepan and ensure they are submerged in the wine mixture. Reduce heat to low and simmer for 20–25 minutes, flipping the pears occasionally, until they are tender but not mushy.

Remove the pears from the wine and set them aside to cool. Continue simmering the wine over medium heat for 10–15 minutes until reduced to a syrupy consistency. Discard the cinnamon stick and thyme sprigs.

While the wine reduces, preheat the oven to 375°F (190°C).
