  • 0.5 cups Brown sugar (packed)
  • 0.5 cups Unsweetened applesauce
  • 2 large Egg whites
  • 1.5 teaspoons Vanilla extract
  • 1 cup Grated zucchini (packed)
  • 0.25 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. Whisk together until evenly mixed.

In a separate bowl, whisk together the brown sugar, unsweetened applesauce, egg whites, and vanilla extract until smooth.
