Ingredients

  • 10 leaves Fresh mint leaves
  • 1 medium Lime
  • 120 ml Coconut milk
  • 180 ml Coconut water
  • 1 tablespoon White sugar or simple syrup
  • 6 cubes Ice cubes
  • 90 ml Club soda
  • 1 teaspoon Desiccated coconut (optional for garnish)
  • 1 sprig Mint sprig (for garnish)

Directions

Step 1

Wash the mint leaves and lime thoroughly. Pat dry with a clean towel.

Step 2

In a tall glass, add 10 fresh mint leaves, 1 tablespoon of white sugar (or simple syrup), and the juice of one freshly squeezed lime.

Step 3

Using a muddler or the back of a wooden spoon, gently muddle the mint leaves, sugar, and lime juice together to release the mint’s flavor.

Step 4

Add 120 ml of coconut milk and 180 ml of coconut water to the glass. Stir well to combine.

Step 5

Fill the glass with 6 ice cubes or more, as desired.

Step 6

Top off with 90 ml of club soda for a fizzy finish. Stir gently to mix.

Step 7

Optionally, sprinkle a little desiccated coconut on top for garnish and add a sprig of mint to enhance the presentation.
