Ingredients

  • 2 cups Fresh violet flowers
  • 1 cup Water
  • 1 cup Granulated sugar
  • 0.5 teaspoons Lemon juice

Directions

Step 1

Gently rinse the violet flowers in cool water to remove any dirt or insects. Remove any stems or green parts from the flowers.

Step 2

Place the cleaned violet flowers in a heatproof bowl or jar and pour 1 cup of boiling water over them.

Cover the bowl or jar and let the flowers steep for 24 hours at room temperature. The water should take on a light purple color.

Step 4

Strain the violet-infused water through a fine mesh sieve or cheesecloth into a small saucepan. Discard the spent flowers.

Step 5

Add 1 cup of granulated sugar to the saucepan with the violet water and stir well.

Heat the mixture over medium heat, stirring frequently, until the sugar has dissolved completely. Do not let the syrup boil vigorously, as this may reduce its delicate flavor.

Once the sugar is fully dissolved, add 1/2 teaspoon of lemon juice. The lemon juice will brighten the color of the syrup and enhance the flavor.
