  • 200 g Granulated sugar
  • 1.5 tbsp Dried culinary lavender
  • 120 ml Violet syrup
  • 2 tbsp Lemon juice
  • 1 drop Food-grade violet color gel (optional)

Directions

Step 1

In a medium saucepan, combine the water, granulated sugar, and dried culinary lavender.

Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar has fully dissolved. This should take about 5 minutes.

Step 3

Remove the saucepan from heat and let the lavender steep for 10 minutes to infuse its flavor into the syrup.

Strain the syrup through a fine-mesh sieve into a heatproof bowl to remove the lavender flowers. Allow it to cool to room temperature.

Once the syrup is cool, stir in the violet syrup, lemon juice, and food-grade violet color gel (if using) to enhance the color.
