  • 4 pieces bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 1 cup white wine (dry)
  • 0.5 cup chicken broth
  • 3 garlic cloves, minced
  • 2 shallots, thinly sliced
  • 2 cups red or green seedless grapes
  • 6 fresh thyme sprigs
  • 2 fresh rosemary sprigs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon unsalted butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Pat the chicken thighs dry with paper towels and season them all over with salt and black pepper.

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, sear the chicken thighs, skin side down, for 4-5 minutes or until golden brown and crispy. Flip and sear the other side for 2-3 minutes. Transfer the chicken to a plate and set aside.
