Vinegar Pudding

Delightfully old-fashioned and irresistibly comforting, Vinegar Pudding is a unique dessert that merges a soft, cake-like top with a rich, caramel-like sauce hidden beneath. Despite its intriguing name, the vinegar subtly enhances the pudding’s flavor, balancing the sweetness and adding a gentle tang that keeps you coming back for more. This simple recipe combines pantry staples like brown sugar, vanilla, and butter, along with a clever “magic” sauce made by layering boiling water over the batter before baking. Perfectly golden and bubbling out of the oven, this self-saucing pudding is best served warm, draped in its luscious sauce, and optionally topped with a dollop of whipped cream or a scoop of vanilla ice cream. Easy to prepare in under an hour, Vinegar Pudding is a nostalgic treat ideal for cozy family gatherings or a sweet, crowd-pleasing finish to dinner.

Ingredients

  • 120 g All-purpose flour
  • 150 g Brown sugar
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 240 ml Milk
  • 1 tbsp White vinegar
  • 60 g Butter (melted)
  • 1 tsp Vanilla extract
  • 300 ml Water (boiling)
  • 100 g Brown sugar (for sauce)
  • 30 g Butter (for sauce)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a medium-sized baking dish.

Step 2

In a mixing bowl, combine the all-purpose flour, brown sugar, baking soda, and salt. Mix well.

Step 3

In a separate bowl, mix the milk, white vinegar, melted butter, and vanilla extract until well combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and whisk until a smooth batter forms.

Step 5

Pour the batter into the prepared baking dish, spreading it evenly.

Step 6

In a separate bowl or measuring cup, combine the boiling water, additional brown sugar, and butter for the sauce. Stir until the sugar dissolves and butter melts.

Step 7

Carefully pour the sauce mixture evenly over the batter in the baking dish. Do not stir.

Step 8

Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the pudding is set with a bubbling sauce beneath.

Step 9

Remove from the oven and allow to cool for 5 minutes before serving.

Step 10

Serve warm, spooning the sauce from the bottom over each portion. Optionally, top with whipped cream or vanilla ice cream.
