  • 1 cup prunes
  • 1 cup water
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 0.5 cup unsalted butter, softened
  • 3 eggs
  • 0.5 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon allspice
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan.

Step 2

In a small saucepan, combine prunes and water. Bring to a simmer over medium heat and cook for 5-7 minutes until the prunes are soft. Remove from heat and allow to cool slightly.

Once cooled, puree the prunes and their liquid in a blender or food processor until smooth. Set aside.
