Ingredients

  • 1 pound ground turkey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 stalks green onions, finely chopped
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 cup panko breadcrumbs
  • 1 large egg, beaten
  • 8 ounces rice noodles
  • 1 large carrot, julienned
  • 1 medium cucumber, thinly sliced
  • 0.5 cup fresh mint leaves
  • 0.5 cup fresh cilantro leaves
  • 1 lime, cut into wedges
  • 0.25 cup water
  • 2 tablespoons fish sauce (for sauce)
  • 2 tablespoons sugar (for sauce)
  • 2 tablespoons lime juice
  • 1 clove garlic, minced (for sauce)
  • 1 teaspoon sriracha (optional, for sauce)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, combine ground turkey, minced garlic, minced ginger, chopped green onions, fish sauce, soy sauce, sugar, panko breadcrumbs, and the beaten egg. Mix until just combined, being careful not to overwork the meat.

Step 3

Scoop out about 1 1/2 tablespoons of the mixture and roll into meatballs. Place the meatballs onto the prepared baking sheet, evenly spaced.

Step 4

Bake the meatballs in the preheated oven for 15-18 minutes, or until they are cooked through and slightly browned.

Step 5

While the meatballs are baking, prepare the rice noodles according to the package instructions. Drain and rinse under cold water to prevent sticking.

Step 6

In a small bowl, whisk together the water, fish sauce, sugar, lime juice, minced garlic, and sriracha (if using) to make the dipping sauce.

Step 7

Assemble the bowls by dividing the cooked rice noodles among serving bowls. Top with julienned carrots, sliced cucumber, fresh mint, and cilantro.

Step 8

Add the baked turkey meatballs on top of the noodles and drizzle with the prepared sauce, or serve the sauce on the side for dipping.

Step 9

Garnish with a lime wedge for squeezing and serve immediately.
