Ingredients

  • 12 pieces Rice paper wrappers
  • 12 large Shrimp, cooked and peeled
  • 100 grams Rice vermicelli noodles
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 1 small Red bell pepper, julienned
  • 12 leaves Fresh mint leaves
  • 12 sprigs Fresh cilantro sprigs
  • 12 leaves Fresh basil leaves
  • 120 ml Sweet chili sauce
  • 1 tablespoon Soy sauce
  • 2 tablespoons Water
  • 1 tablespoon Lime juice

Directions

Step 1

Prepare the rice vermicelli noodles according to the package instructions. Drain and set aside to cool.

Step 2

Lay out all your prepared vegetables (carrot, cucumber, and bell pepper) and herbs (mint, cilantro, and basil) on a clean surface for easy assembly.

Step 3

Fill a large bowl or shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds or until it becomes soft and pliable. Remove and place it flat on a clean, damp kitchen towel or cutting board.

Step 4
