Ingredients

  • 250 grams Shrimp (peeled and deveined)
  • 250 grams Squid (cleaned and cut into rings)
  • 3 tablespoons Lime juice (freshly squeezed)
  • 2 tablespoons Fish sauce
  • 1.5 tablespoons Sugar
  • 2 cloves Garlic (finely minced)
  • 1 large Red chili (thinly sliced)
  • 1 medium Carrot (julienned)
  • 1 medium Cucumber (seeded and julienned)
  • 1 small Red onion (thinly sliced)
  • 0.5 cup Fresh cilantro (chopped)
  • 0.5 cup Fresh mint leaves (chopped)
  • 2 tablespoons Roasted peanuts (crushed)
  • 3 cups Water

Directions

Step 1

In a medium pot, bring 3 cups of water to a boil. Add the squid rings and cook for 1-2 minutes or until they turn opaque. Remove immediately with a slotted spoon and place in a bowl of ice water to stop the cooking. Drain and set aside.

Step 2

Using the same pot of boiling water, add the shrimp and cook for 2-3 minutes or until pink and fully cooked. Remove and place in the bowl of ice water. Drain and set aside with the squid.
