  • 2 tbsp Lime juice
  • 2 tbsp Fish sauce (for dipping sauce)
  • 1 tbsp Rice vinegar
  • 1 tbsp Sugar (for dipping sauce)
  • 3 tbsp Water (for dipping sauce)
  • 1 small Red chili (sliced, optional)
  • 2 tbsp Fresh herbs (optional; mint or Thai basil)

Directions

Step 1

In a large mixing bowl, combine ground pork, minced shallot, minced garlic, fish sauce, brown sugar, ground white pepper, cornstarch, and 1 tbsp of water. Mix well until the ingredients are evenly incorporated, but avoid over-mixing.

With your hands, form the pork mixture into small patties, about 2 inches in diameter and 1/2 inch thick. You should have around 12 patties.
