Ingredients

  • 250 g Rice vermicelli noodles
  • 500 g Pork shoulder, thinly sliced
  • 3 Lemongrass stalks
  • 3 Garlic cloves, minced
  • 2 Shallots, finely chopped
  • 60 ml Fish sauce
  • 30 ml Soy sauce
  • 40 g Sugar
  • 1 tsp Black pepper
  • 1 Cucumber, julienned
  • 1 Carrots, julienned
  • 100 g Bean sprouts
  • 20 g Fresh mint leaves
  • 20 g Fresh cilantro
  • 50 g Roasted peanuts, chopped
  • 1 Lime, cut into wedges
  • 1 Red chili, sliced
  • 120 ml Nuoc cham sauce
  • 2 tbsp Vegetable oil

Directions

Step 1

Start by preparing the marinade for the pork. In a bowl, combine minced lemongrass, garlic, shallots, fish sauce, soy sauce, sugar, and black pepper. Mix well.

Step 2

Add the thinly sliced pork shoulder to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.

Step 3

While the pork is marinating, bring a large pot of water to a boil. Add the rice vermicelli noodles and cook according to package instructions until tender. Drain, rinse with cold water, and set aside.

Preheat a grill or grill pan over medium-high heat. Add a little vegetable oil to prevent sticking.
