Ingredients

  • 2 lbs Pork spareribs
  • 3 stalks Fresh lemongrass stalks (outer layers removed, finely minced)
  • 4 cloves Garlic cloves (minced)
  • 2 medium Shallots (minced)
  • 3 tbsp Fish sauce
  • 2 tbsp Soy sauce
  • 2 tbsp Brown sugar
  • 1 tsp Black pepper
  • 3 tbsp Vegetable oil
  • 1 cup Water
  • 2 tbsp Chopped scallions (for garnish)
  • 1 tbsp Sesame seeds (optional, for garnish)

Directions

Step 1

Cut the spareribs into individual sections, if not already pre-cut. Rinse under cold water and pat dry using paper towels.

Step 2

In a large bowl, combine minced lemongrass, garlic, shallots, fish sauce, soy sauce, brown sugar, and black pepper. Mix well to form a marinade.

Step 3

Add the spareribs to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and let the ribs marinate for at least 1 hour (or up to overnight in the refrigerator for deeper flavor).

Step 4

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated spareribs (reserve the marinade) and sear them on all sides until browned, about 6-8 minutes.
