Ingredients

  • 500 grams Raw prawns (peeled and deveined)
  • 8 pieces Sugarcane sticks (cut into 4-inch pieces)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Shallots (minced)
  • 1 stalk Lemongrass (finely chopped, tender part only)
  • 2 tablespoons Fish sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Cornstarch
  • 0.5 teaspoon White pepper
  • 1 tablespoon Cooking oil
  • 1 bunch Fresh herbs (mint, cilantro, lettuce for serving)
  • 8 pieces Rice paper for serving
  • 1 cup Vietnamese dipping sauce (nuoc cham)

Directions

Step 1

Start by soaking the sugarcane sticks in water for about 30 minutes to prevent them from burning during grilling.

Step 2

In a food processor, combine the prawns, minced garlic, minced shallots, chopped lemongrass, fish sauce, sugar, cornstarch, white pepper, and cooking oil. Blend the mixture until it forms a smooth paste.

Step 3

Divide the prawn paste into 8 equal portions. Take each portion and mold it evenly around one sugarcane stick, pressing firmly to make sure the paste adheres well.

Step 4

Preheat a grill or grill pan over medium heat. Lightly oil the surface to prevent sticking.

Step 5

Grill the sugarcane prawns for 8-10 minutes, turning frequently, until the prawn mixture is cooked through and has a slightly golden, charred appearance.

Step 6

Serve the grilled sugarcane prawns with fresh herbs, rice paper, and Vietnamese dipping sauce. Wrap the prawns in soaked rice paper with herbs and lettuce to enjoy.
