Ingredients

  • 200 grams rice vermicelli noodles
  • 300 grams shrimp
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 2 teaspoons granulated sugar
  • 2 pieces garlic cloves, minced
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • 0.5 cup fresh cilantro, chopped
  • 0.5 cup fresh mint, chopped
  • 2 tablespoons peanuts, crushed
  • 1 cup bean sprouts
  • 1 small red chili, thinly sliced
  • 2 teaspoons vegetable oil

Directions

Step 1

Cook the rice vermicelli noodles according to the package instructions. Drain, rinse with cold water, and set aside.

Step 2

In a small bowl, whisk together the soy sauce, fish sauce, lime juice, sugar, and garlic until the sugar dissolves to create the dressing. Set aside.

Step 3

Heat the vegetable oil in a skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove from heat and set aside.
