Ingredients

  • 200 grams Rice noodles (thin, vermicelli-style)
  • 400 grams Shrimp (peeled and deveined)
  • 1 medium Cucumber (julienned)
  • 1 medium Carrot (julienned or shredded)
  • 0.5 cup Fresh herbs (cilantro, mint, and Thai basil, chopped)
  • 1 cup Lettuce (shredded)
  • 2 tablespoons Roasted peanuts (chopped, optional)
  • 4 tablespoons Fish sauce
  • 3 tablespoons Lime juice (freshly squeezed)
  • 2 tablespoons Sugar
  • 2 cloves Garlic (minced)
  • 1 small Red chili (thinly sliced, optional)
  • 3 tablespoons Water
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Salt

Directions

Step 1

Bring a large pot of water to a boil. Cook the rice noodles according to the package instructions (approximately 4–5 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

In a medium pot, bring water to a boil with 1 teaspoon of salt. Add the shrimp and cook for 2–3 minutes, or until they turn pink and are cooked through. Drain and rinse under cold water. Set aside.
