Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3 cups Shredded green cabbage
  • 1 cup Shredded carrots
  • 1 cup Sliced cucumber
  • 0.5 cup Fresh mint leaves
  • 0.5 cup Fresh cilantro leaves
  • 0.25 cup Peanuts, crushed
  • 3 tablespoons Fish sauce
  • 3 tablespoons Fresh lime juice
  • 1 tablespoon Granulated sugar
  • 1 clove Garlic, minced
  • 1 small Red chili, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 cup Water

Directions

Step 1

Place the chicken breasts in a medium pot and add 1 cup of water along with a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cook for 10-12 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C).

Step 2

Once cooked, remove the chicken from the pot and let it cool slightly. Shred the chicken with two forks and set aside.
