  • 1.5 lbs Chicken (thighs or drumsticks)
  • 1 can (14 oz) Coconut milk
  • 1 cup Chicken stock
  • 2 large Potatoes (peeled and cut into chunks)
  • 2 medium Carrots (peeled and sliced diagonally)
  • 1 large Yellow onion (sliced)
  • 3 cloves Garlic (minced)
  • 1 tbsp Ginger (minced)
  • 2 tbsp Curry powder
  • 2 stalks Lemongrass (cut into 2-3 inch pieces and smashed)
  • 2 tbsp Fish sauce
  • 1 tbsp Sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Vegetable oil
  • 0.25 cup Chopped cilantro (for garnish)

Directions

Step 1

Prepare the chicken by washing and patting it dry. Set aside.

Heat vegetable oil in a large pot over medium heat. Add the minced garlic and ginger, and sauté until fragrant, about 1-2 minutes.
