Ingredients

  • 4 cups Romaine lettuce
  • 1 large Carrot
  • 1 medium Daikon radish
  • 1 large Cucumber
  • 1 cup Fresh cilantro
  • 1 cup Fresh mint
  • 2 cups Cooked chicken breast or tofu
  • 1 cup French baguette croutons
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Granulated sugar
  • 2 tablespoons Lime juice
  • 1 tablespoon Fish sauce (or soy sauce for vegetarian version)
  • 1 teaspoon Sesame oil
  • 1 clove Garlic
  • 1 small Red chili
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and chop the romaine lettuce into bite-sized pieces and place in a large salad bowl.

Step 2

Peel the carrot and daikon radish, then julienne them into thin strips. Add to the salad bowl.

Slice the cucumber into thin rounds and add to the bowl as well.
