Ingredients

  • 4 large (about 2 lbs) Vidalia onions
  • 4 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1.5 cups Whole milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 cups (shredded) Swiss cheese
  • 0.5 cups Panko breadcrumbs
  • 0.25 cups (grated) Parmesan cheese
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x9-inch baking dish and set aside.

Step 2

Peel and slice the Vidalia onions into 1/4-inch thick rings.

Step 3

In a large skillet, melt the butter over medium heat. Add the onions and sauté for 10–12 minutes, stirring occasionally, until they soften and become translucent. Remove from heat.

Step 4

Sprinkle the flour over the onions and stir well to combine, ensuring there are no lumps. Gradually pour in the milk, stirring constantly. Return the skillet to low heat.

Step 5

Add the salt and black pepper, and cook the mixture gently for 3–4 minutes, stirring frequently, until it thickens into a creamy sauce.

Step 6

Stir in 1.5 cups of the shredded Swiss cheese until melted and incorporated into the sauce. Remove from heat.

Step 7

Transfer the onion and cheese mixture to the prepared baking dish, spreading it evenly.

Step 8

In a small bowl, mix the panko breadcrumbs, grated Parmesan cheese, and olive oil until the crumbs are lightly coated.

Step 9

Sprinkle the breadcrumb mixture evenly over the onions. Top with the remaining 0.5 cups of Swiss cheese.

Step 10

Place the baking dish in the preheated oven and bake for 25–30 minutes, or until the top is golden brown and bubbly.

Step 11

Remove from the oven and let rest for 5 minutes before serving. Enjoy your Vidalia Onion Swiss Bake as a side dish or with a crusty piece of bread!
