Ingredients

  • 3 large Vidalia onions
  • 4 tablespoons unsalted butter
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup sharp cheddar cheese
  • 0.5 cup parmesan cheese
  • 0.5 cup whole milk
  • 4 ounces cream cheese
  • 0.5 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon paprika

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch casserole dish.

Step 2

Peel and thinly slice the Vidalia onions. In a large skillet, melt the butter over medium heat, then add the onions. Sauté the onions until caramelized, about 15-20 minutes. Stir occasionally to prevent them from sticking or burning.

Step 3

While the onions cook, rinse the rice under cool water until the water runs clear to remove excess starch. In a medium saucepan, bring the chicken broth to a boil. Add the rice, cover, and reduce the heat to low. Cook the rice for 15 minutes or until tender and the liquid is absorbed. Remove from heat and fluff with a fork.

Step 4

Once the onions are golden and caramelized, remove the skillet from heat. Stir in the cream cheese until it melts and blends with the onions.

Step 5

In a large mixing bowl, combine the cooked rice, caramelized onion mixture, sharp cheddar cheese, parmesan cheese, milk, salt, pepper, and paprika. Mix until well combined.

Step 6

Transfer the mixture into the prepared casserole dish, spreading it out evenly.

Step 7

In a small bowl, toss the panko breadcrumbs with olive oil until lightly coated. Sprinkle the breadcrumb mixture evenly over the casserole.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbling.

Step 9

Remove the casserole from the oven and let it sit for 5 minutes before serving. Serve warm and enjoy!
