Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
Peel the Vidalia onions and slice them into thin rounds. Peel, core, and slice the apples into thin wedges.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the onions and sauté for 5-7 minutes until they soften and become translucent. Remove the onions from the skillet and set aside.
In the same skillet, add the apple slices and sauté for 3-4 minutes until just tender. Remove from the skillet and set aside.
In a medium saucepan, melt the remaining 2 tablespoons of butter over medium heat. Stir in the flour and cook for 1 minute, stirring constantly to form a roux.
Gradually whisk in the milk and cook until the mixture thickens, about 2-3 minutes. Stir in the brown sugar, shredded cheddar cheese, salt, and black pepper until the cheese has melted and the sauce is smooth.
Layer half of the sautéed onions in the bottom of the prepared baking dish. Top with half of the sautéed apples. Repeat with the remaining onions and apples.

Bake in the preheated oven for 30-35 minutes or until the casserole is bubbly and golden brown on top.
Remove from the oven and let the casserole rest for 5 minutes. Garnish with chopped parsley, if desired, and serve warm.
