Ingredients

  • 2 tablespoons Olive oil
  • 1 large, chopped Onion
  • 3 minced Garlic cloves
  • 1 sliced, white and light green parts only Leek
  • 2 chopped Celery stalks
  • 2 cups Broccoli florets
  • 3 cups Spinach leaves
  • 1 medium, chopped Zucchini
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 0.5 cup, chopped Fresh parsley
  • 0.5 cup, chopped Fresh basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and sauté for 5 minutes until translucent.

Step 3

Stir in the garlic, leek, and celery, and cook for another 3 minutes.

Step 4

Add the broccoli florets, spinach leaves, and zucchini to the pot.

Step 5

Pour in the vegetable broth, increase the heat to medium-high, and bring to a boil.

Reduce the heat to low, cover the pot, and let it simmer for 20 minutes, or until the vegetables are tender.

Remove the pot from heat and allow the soup to cool slightly.
