Ingredients

  • 500 grams All-purpose flour
  • 10 grams Instant yeast
  • 15 grams Granulated sugar
  • 5 grams Salt
  • 300 milliliters Warm water
  • 1 liter Vegetable oil (for frying)
  • 500 grams Ground beef
  • 1 medium Onion, finely chopped
  • 2 pieces Garlic cloves, minced
  • 30 grams Tomato paste
  • 150 milliliters Beef stock
  • 5 grams Paprika
  • 5 grams Ground cumin
  • 5 grams Salt
  • 3 grams Black pepper
  • 10 grams Fresh parsley, chopped (optional for garnish)

Directions

Step 1

In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.

Step 2

Gradually add the warm water while mixing to form a soft, elastic dough. Knead the dough for about 8-10 minutes until smooth.

Step 3

Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for 1 hour, or until it has doubled in size.

Step 4

While the dough is rising, prepare the meat filling. Heat a tablespoon of vegetable oil in a pan over medium heat.

Step 5

Sauté the chopped onion until soft and translucent, about 3-4 minutes.

Step 6

Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 7

Add the ground beef to the pan and cook until browned, breaking it up with a wooden spoon.

Step 8

Stir in the tomato paste, paprika, ground cumin, salt, and black pepper. Cook for 2-3 minutes to develop the flavors.

Step 9

Pour in the beef stock, reduce the heat to low, and simmer the mixture until it thickens, about 10 minutes.

Step 10

Remove the meat filling from heat and set aside. Garnish with fresh parsley if desired.

Step 11

After the dough has risen, punch it down to release the air and divide it into 6 equal portions.

Step 12

Roll each portion into a smooth ball and flatten slightly with your hands.

Step 13

Heat the vegetable oil in a deep pot or fryer to 180°C (350°F). Carefully fry the vetkoek one or two at a time, turning them often, until golden brown and cooked through, about 4-5 minutes.

Step 14

Remove the vetkoek from the oil and place them on a paper towel-lined plate to remove excess oil.

Step 15

Once the vetkoek are slightly cooled, slice each one open (like a bun) and stuff with the prepared meat filling.

Step 16

Serve warm and enjoy your homemade Vetkoek with Meat Filling!
