  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 cup parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with a small amount of olive oil or cooking spray.

Step 2

Chop the broccoli, cauliflower, zucchini, and carrot into bite-sized pieces. Finely chop the onion and mince the garlic.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until fragrant and translucent, about 2-3 minutes.

Add the broccoli, cauliflower, zucchini, and carrot to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
