Ingredients

  • 2 cups Rolled oats
  • 1.5 cups All-purpose flour
  • 1 cup Brown sugar (packed)
  • 0.5 cup Granulated sugar
  • 1 cup Unsalted butter, softened
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the rolled oats, all-purpose flour, ground cinnamon, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together with an electric mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs and vanilla extract to the butter mixture and beat until well combined.

Step 5

Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.

Step 6

If using raisins or chocolate chips, gently fold them into the cookie dough using a spatula.

Step 7

Using a tablespoon or cookie scoop, drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers should still look slightly underbaked.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 1 week, or freeze for longer storage.
