Ingredients

  • 4 medium potatoes
  • 1 medium onion
  • 2 cloves garlic
  • 2 tablespoons butter
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Directions

Step 1

Peel and dice the potatoes into small cubes. Set aside.

Step 2

Finely chop the onion and mince the garlic.

Step 3

In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until they are soft and fragrant.

Step 4

Add the diced potatoes to the pot and stir to combine.

Step 5

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer, cover the pot with a lid, and cook for 15-20 minutes or until the potatoes are tender.

Step 6

Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer it in batches to a regular blender to puree.

Step 7

Return the pureed soup to the pot and stir in the milk, salt, and black pepper. Heat the soup over low heat until warmed through, but do not let it boil.

Step 8

Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley if desired.
