Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 2 tablespoons soy sauce
  • 1 cup frozen peas and carrots
  • 2 stalks green onions
  • 1 clove garlic
  • 0.25 teaspoons salt
  • 0.25 teaspoons pepper

Directions

Step 1

Prepare your ingredients: beat the eggs in a small bowl, finely chop the green onions, and mince the garlic.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Add the beaten eggs to the skillet and scramble them. Once cooked, remove them from the skillet and set aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the same skillet and heat over medium-high heat.

Step 5

Add the minced garlic and cook for about 30 seconds until fragrant.

Step 6

Stir in the frozen peas and carrots, and cook for 2-3 minutes until warmed through.

Step 7

Add the cooked rice to the skillet and stir well to combine everything evenly. Cook for 2-3 minutes, breaking up any clumps of rice.

Push the rice mixture to one side of the skillet and pour the soy sauce directly into the pan. Mix the soy sauce into the rice evenly.

Add the scrambled eggs back to the skillet along with the chopped green onions. Stir everything together to combine.

Season with salt and pepper to taste, and cook for another minute to meld the flavors.
