  • 200 grams All-purpose flour
  • 100 grams Unsalted butter (cold and cubed)

  • 300 grams Spinach (fresh, chopped)
  • 1 tablespoon Olive oil
  • 2 cloves Garlic (minced)
  • 100 grams Feta cheese (crumbled)
  • 2 large Eggs (beaten)
  • 100 milliliters Heavy cream
  • 0.25 teaspoons Nutmeg (freshly grated, optional)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 20 grams Parmesan cheese (grated, optional)

Directions

Step 1

Prepare the tart crust: In a large bowl, combine the all-purpose flour and a pinch of salt. Add the cold, cubed butter and use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs.

Add cold water, one tablespoon at a time, mixing gently with a fork until the dough just comes together. Be careful not to overmix.

Turn the dough onto a floured surface and form it into a disc. Wrap in plastic wrap and chill in the refrigerator for at least 20 minutes.

Preheat the oven to 190°C (375°F).
