Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 3 large lemons
  • 6 cloves garlic
  • 3 tablespoons olive oil
  • 1 cup chicken broth
  • 2 tablespoons honey
  • 2 teaspoons fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Zest two of the lemons and juice all three. Set aside the zest and juice separately.

Step 3

Mince the garlic cloves finely.

Step 4

In a small bowl, whisk together the lemon juice, honey, olive oil, salt, and black pepper. Set aside.

Step 5

Pat the chicken thighs dry with paper towels. Season both sides with a bit of salt and pepper.

Step 6

Heat a large oven-safe skillet over medium-high heat and add the butter. Allow it to melt and foam slightly.

Step 7

Place the chicken thighs skin-side down in the hot skillet. Sear for 4-5 minutes, or until the skin is golden and crispy. Flip the chicken over and sear the other side for 2 minutes.

Step 8

Transfer the chicken temporarily to a plate. To the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.

Pour in the chicken broth, scraping the bottom of the skillet to deglaze any browned bits. Stir in the lemon zest, thyme, and the lemon juice mixture.

Return the chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the chicken.

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Once done, remove the skillet from the oven. Let the chicken rest for 5 minutes, allowing the flavors to meld.

Serve the chicken with the lemony sauce spooned generously over the top. Garnish with extra thyme sprigs if desired.
