  • 1 small red onion
  • 2 cloves garlic
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley
  • 0.5 teaspoons ground black pepper
  • 0.25 teaspoons salt
  • 50 grams baby spinach leaves

Directions

Step 1

Start by preparing the ingredients. Halve the cherry tomatoes, finely chop the red onion, and mince the garlic. Chop the fresh parsley and set everything aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté for 2-3 minutes until softened and fragrant.

Add the cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they start to soften and release their juices.
