Ingredients

  • 1 pound Ground beef
  • 1 packet Taco seasoning mix
  • 0.25 cup Water
  • 2 cups Enchilada sauce
  • 8 pieces Flour tortillas
  • 2 cups Shredded Mexican cheese blend
  • 0.5 cup Sour cream
  • 2 tablespoons Chopped cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat a large skillet over medium-high heat and cook the ground beef until browned, breaking it apart with a spatula.

Step 3

Drain any excess grease from the skillet and return the beef to the pan.

Step 4

Add the taco seasoning mix and water to the cooked beef. Stir well and let it simmer for 2-3 minutes until slightly thickened. Remove from heat.

Step 5

Spread 1/2 cup of the enchilada sauce evenly across the bottom of a 9x13-inch baking dish.

Step 6

Warm the tortillas in the microwave for 15-20 seconds to make them easier to roll.

Step 7

Spoon about 2-3 tablespoons of the beef mixture into the center of each tortilla. Add a small handful of shredded cheese on top of the beef.

Step 8

Roll up each tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and beef mixture.

Step 9

Pour the remaining enchilada sauce evenly over the top of the rolled tortillas, ensuring they are fully covered.

Step 10

Sprinkle the rest of the shredded cheese over the enchiladas.

Step 11

Cover the baking dish with foil and bake in the preheated oven for 15 minutes.

Step 12

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 13

Remove the enchiladas from the oven and let them cool for a few minutes before serving.

Step 14

Top with sour cream and a sprinkle of cilantro, if desired. Serve warm and enjoy!
