Ingredients

  • 2 pieces unsweetened pie crust
  • 4 cups ripe pears, peeled, cored, and sliced
  • 2 cups fresh cranberries
  • 3 quarters granulated sugar
  • 0.25 cup brown sugar
  • 0.25 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 tablespoon milk or cream (for brushing)
  • 1 tablespoon coarse sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Roll out one pie crust and fit it into a 9-inch pie dish, trimming any excess overhang. Place it in the refrigerator to chill while preparing the filling.

Step 3

In a large mixing bowl, combine the sliced pears, fresh cranberries, granulated sugar, brown sugar, cornstarch, ground cinnamon, ground nutmeg, and salt. Gently toss until the fruit is evenly coated.

Step 4

Pour the fruit mixture into the prepared pie crust, spreading it out evenly.

Step 5

Dot the fruit filling with small pieces of unsalted butter.

Step 6

Roll out the second pie crust and lay it over the filling. Trim and crimp the edges to seal. Cut small slits or decorative shapes into the top crust to allow steam to escape.

Step 7

Brush the top crust with milk or cream, and sprinkle with coarse sugar for added texture and sweetness.

Step 8

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 40-50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 9

If the crust browns too quickly, cover the edges with aluminum foil to prevent over-browning.

Step 10

Remove the pie from the oven and allow it to cool for at least 2 hours to let the filling set before slicing and serving.
