Ingredients

  • 1.25 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoons ground cinnamon
  • 0.25 teaspoons salt
  • 0.5 cups brown sugar
  • 0.5 cups unsweetened applesauce
  • 0.5 cups milk
  • 0.25 cups vegetable oil
  • 1 teaspoons vanilla extract
  • 1 large egg
  • 1 cup mixed fresh berries (e.g., blueberries, raspberries, diced strawberries)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, combine the flour, oats, baking powder, baking soda, cinnamon, and salt. Stir well to evenly distribute the dry ingredients.

Step 3

In a medium bowl, whisk together the brown sugar, applesauce, milk, vegetable oil, vanilla extract, and egg until smooth and well blended.

Step 4

Gradually pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; do not overmix.

Step 5

Fold the mixed berries into the batter, being careful not to crush them.

Step 6

Evenly divide the batter among the prepared muffin cups, filling each cup about 3/4 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
