  • 200 g Strawberries
  • 150 g Blueberries
  • 150 g Raspberries
  • 250 g Mascarpone cheese
  • 120 ml Heavy cream
  • 50 g Sugar
  • 1 tsp Vanilla extract
  • 1 tbsp Lemon juice
  • 8 pieces Graham crackers
  • 50 g Unsalted butter
  • 1 tbsp Honey
  • 1 tbsp Powdered sugar (for garnish)
  • 5 leaves Mint leaves (optional, for garnish)

Directions

Step 1

Wash and dry the strawberries, blueberries, and raspberries. Slice the strawberries into quarters and leave the blueberries and raspberries whole.

Step 2

In a mixing bowl, combine the mascarpone cheese, heavy cream, sugar, and vanilla extract. Whisk together until smooth and fluffy. Set aside.

In a small bowl, mix the fresh berries with the lemon juice and honey. Stir gently to coat the berries evenly. Set aside.

Place the graham crackers in a food processor and blitz into fine crumbs, or crush them manually in a plastic bag using a rolling pin.
