Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Mix until evenly distributed.
In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until a consistent dough forms. If adding nuts or dried fruits, fold them into the dough at this stage.
Divide the dough into two even portions. Shape each portion into a log approximately 30 cm (12 inches) long and 6 cm (2.5 inches) wide.
Place the logs onto the prepared baking tray, leaving some space between them. Bake in the preheated oven for 25-30 minutes or until the logs are golden brown and firm to the touch.
Remove the baked logs from the oven and allow them to cool for 10 minutes. Lower the oven temperature to 150°C (300°F).
Using a sharp serrated knife, slice the logs into 1.5 cm (0.6 inch) thick slices. Lay the slices flat on the baking tray.
Return the tray to the oven and bake for an additional 20 minutes. Flip the slices over and bake for another 15-20 minutes, or until the rusks are dry and crisp.
Allow the rusks to cool completely on a wire rack before storing them in an airtight container. They can be stored at room temperature for up to two weeks.
