Ingredients

  • 2 cups mixed berries (fresh or frozen, such as strawberries, blueberries, raspberries, or blackberries)
  • 0.5 cup granulated sugar
  • 0.5 cup water
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon vanilla extract (optional)

Directions

Step 1

In a medium saucepan, combine the mixed berries, granulated sugar, and water.

Step 2

Place the saucepan over medium heat and stir occasionally until the sugar dissolves and the berries release their juices, about 3–4 minutes.

Step 3

Bring the mixture to a gentle simmer. Use a fork or spoon to mash the berries lightly to release more juice (skip this step if you'd prefer a chunkier syrup).

Step 4

Simmer for 6–8 minutes, stirring occasionally, until the syrup thickens slightly. It will continue to thicken as it cools.

Step 5

Remove the saucepan from heat and stir in the lemon juice and optional vanilla extract for added flavor.

Step 6

Strain the syrup through a fine-mesh sieve into a heat-proof jar or container, gently pressing the solids to extract more liquid if desired (discard the solids or use them as a topping for yogurt or oatmeal).

Step 7

Allow the syrup to cool to room temperature, then refrigerate. It can be stored in an airtight container in the refrigerator for up to 1 week.

Step 8

Serve the berry syrup warm or cold as a topping for pancakes, waffles, oatmeal, ice cream, or even stirred into drinks for a fruity twist!
