Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 0.5 cup pure Vermont maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with aluminum foil to prevent sticking.

Step 2

In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, red pepper flakes, and chopped rosemary. Set aside.

Step 3

Pat the chicken thighs dry with paper towels, then season them on both sides with salt and black pepper.

Step 4

Heat olive oil in a large oven-safe skillet over medium-high heat. When the oil is shimmering, place the chicken thighs skin-side down in the pan. Sear for 4-5 minutes, or until the skin is golden brown and crispy. Flip and cook the other side for 2-3 minutes.

Step 5

Remove the skillet from heat and pour the maple syrup mixture evenly over the chicken thighs, ensuring each piece is coated.

Step 6

Transfer the skillet or baking dish to the preheated oven and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Baste the chicken with the pan sauce halfway through cooking for extra flavor.

Step 7

Remove the chicken from the oven and let it rest for 5 minutes. Spoon the sauce from the pan over the chicken before serving.

Step 8

Garnish with additional rosemary if desired and serve with your choice of sides, such as roasted vegetables or mashed potatoes.
