Ingredients

  • 1 cup Vermicelli
  • 2 tablespoons Ghee
  • 4 cups Milk
  • 0.5 cup Sugar
  • 0.5 teaspoon Cardamom powder
  • 2 tablespoons Cashews
  • 2 tablespoons Raisins
  • 2 tablespoons Almond slices
  • 1 pinch Saffron strands
  • 2 tablespoons Warm milk

Directions

Step 1

Heat 2 tablespoons of ghee in a heavy-bottomed pan over medium heat.

Step 2

Add 1 cup of vermicelli to the pan and roast it until golden brown, stirring constantly to prevent burning. Set it aside.

Step 3

In the same pan, fry 2 tablespoons of cashews until golden, then add 2 tablespoons of raisins and cook until they puff up. Remove from the pan and set aside.

Step 4

In a separate pot, bring 4 cups of milk to a gentle boil over medium heat, stirring occasionally to prevent it from sticking or scorching.

Step 5

Add the roasted vermicelli to the boiling milk and cook for 8-10 minutes, stirring regularly, until the vermicelli softens.

Step 6

Stir in 0.5 cup of sugar and cook for another 4-5 minutes, or until the sugar dissolves completely.

Step 7

Mix 1 pinch of saffron strands with 2 tablespoons of warm milk and add it to the kheer along with 0.5 teaspoon of cardamom powder. Stir well to combine.

Lower the heat and allow the kheer to simmer for an additional 3-4 minutes, stirring occasionally, until the mixture thickens to your desired consistency.
