  • 4 pieces tilapia fillets
  • 2 tablespoons olive oil

  • 4 medium tomatoes, diced
  • 1 cup green olives, sliced
  • 2 tablespoons capers, rinsed and drained
  • 2 pieces pickled jalapeños, sliced
  • 0.5 cup vegetable or chicken broth
  • 1 piece bay leaf
  • 1 teaspoon dried oregano
  • 0.25 cup fresh cilantro, chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Rinse the tilapia fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper. Set aside.

Step 2

In a large skillet or sauté pan, heat olive oil over medium heat.

Add the chopped onion and sauté for 3-4 minutes, until softened and translucent.

Stir in the minced garlic and cook for 1 minute until fragrant.
