Ingredients

  • 4 whole bell peppers
  • 1 pound ground venison
  • 1 cup cooked white rice
  • 1 medium onion
  • 2 whole garlic cloves
  • 1 14.5-ounce can canned diced tomatoes
  • 1 8-ounce can tomato sauce
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut off the tops of the bell peppers and remove the seeds and membranes. Set aside.

Finely chop the onion and garlic cloves.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
