Ingredients

  • 2 8-ounce pieces Venison steak
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 large Yellow onion
  • 1 teaspoon Brown sugar
  • 1 tablespoon Balsamic vinegar
  • 4 Crusty sandwich rolls or ciabatta bread
  • 4 Lettuce leaves
  • 4 tablespoons Mayonnaise
  • 1 Garlic clove (minced)

Directions

Step 1

Season both sides of the venison steaks with salt and pepper, then let them rest at room temperature for 10 minutes.

Step 2

Thinly slice the onions into even rings. Set aside.

Step 3

In a large skillet over medium heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter melts, add the sliced onions.

Step 4

Cook the onions, stirring occasionally, until they are softened, about 10 minutes. Lower the heat to medium-low, then sprinkle with brown sugar and continue to cook for another 20-25 minutes, stirring often, until they are deep golden brown in color.

Step 5

Add balsamic vinegar to the onions and cook for 2 more minutes. Remove the onions from the skillet and set aside.

Step 6

In the same skillet, heat the remaining olive oil and butter over medium-high heat.

Step 7

Sear the venison steaks for 3-4 minutes per side, depending on thickness, until medium-rare (internal temperature of 130°F/55°C). Let the steaks rest for 5 minutes before slicing thinly against the grain.

Step 8

Lightly toast the sandwich rolls or ciabatta bread in the oven or on a griddle.

Step 9

In a small bowl, mix mayonnaise with the minced garlic and spread evenly onto the toasted bread.

Step 10

Layer lettuce leaves on each bottom roll, followed by slices of venison steak and a generous spoonful of caramelized onions. Top with the other half of the bread.

Step 11

Serve immediately and enjoy the flavorful venison steak sandwich!
