Ingredients

  • 3 pounds venison roast
  • 2 teaspoons salt
  • 1.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 4 minced garlic cloves
  • 4 medium, sliced into chunks carrots
  • 3 sliced celery stalks
  • 4 medium, quartered potatoes
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Directions

Step 1

Season the venison roast on all sides with salt and black pepper.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

Sear the venison roast for 3-4 minutes per side until browned. Remove the roast and set it aside.

In the same pot, add the diced onions and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 minute more.
