  • 3 russet potatoes, peeled and diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Combine flour, salt, and black pepper in a large mixing bowl. Toss the venison or beef stew meat in the flour mixture until evenly coated.

Step 2

Heat olive oil over medium-high heat in a large, heavy-bottomed pot or Dutch oven. Sear the meat in batches until browned on all sides, about 3–4 minutes per batch. Transfer browned meat to a plate and set aside.
