Ingredients

  • 1 pound Ground venison
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 1 medium Green bell pepper, diced
  • 3 cloves Garlic, minced
  • 2 15-ounce cans Black beans, drained and rinsed
  • 1 15-ounce can Diced tomatoes with green chilies
  • 1 15-ounce can Tomato sauce
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the diced onion and green bell pepper to the pot and sauté for 5 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the ground venison to the pot. Cook the meat, breaking it up with a wooden spoon, until browned and fully cooked, about 7-8 minutes.

Step 5

Drain any excess grease, if needed, then stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Add the diced tomatoes with green chilies, tomato sauce, black beans, beef broth, and bay leaf to the pot. Stir well to combine.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Cover and simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 8

After 45 minutes, remove the bay leaf. Taste and adjust seasoning with additional salt or spices, if needed.

Step 9

Serve hot, garnished with chopped fresh cilantro, if desired. Enjoy with crusty bread, tortilla chips, or over rice for a complete meal.
