Preheat the oven to 350°F (175°C).
Rinse the wild rice under cold water and drain.
In a medium saucepan, combine the wild rice and broth. Bring to a boil, reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and the liquid is absorbed. Set aside.
While the rice cooks, heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the venison and cook until browned and fully cooked, breaking it apart with a spatula. Transfer the venison to a plate and set aside.
In the same skillet, melt the remaining 1 tablespoon of butter. Add the diced onion, minced garlic, carrot, celery, and mushrooms. Cook for 8-10 minutes, stirring occasionally, until the vegetables are softened.
Stir the cooked venison into the vegetable mixture. Add the thyme, salt, and black pepper. Mix well and remove from heat.
In a large mixing bowl, combine the cooked wild rice, venison mixture, sour cream, and shredded cheese. Mix until evenly incorporated.
Transfer the mixture to a greased 9x13-inch baking dish. Spread it out into an even layer.
If using breadcrumbs, sprinkle them evenly over the top of the casserole.
Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10 minutes, or until heated through and the top is golden brown.
Let the casserole rest for 5 minutes before serving. Garnish with extra fresh thyme if desired.
