Ingredients

  • 2 pounds Russet potatoes
  • 6 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 1 cup Sour cream
  • 2 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 1 cup Cheddar cheese, shredded
  • 2 cloves Garlic, minced
  • 2 tablespoons Chopped fresh chives (optional, for garnish)

Directions

Step 1

Peel and chop the Russet potatoes into evenly sized chunks (about 1.5 inches).

Step 2

Place the potatoes in a large pot and cover them with water. Add 1 teaspoon of salt to the water.

Step 3

Bring the water to a boil over high heat. Reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 4

Preheat your oven to 375°F (190°C).

Step 5

Drain the potatoes and return them to the pot. Allow them to sit for 1-2 minutes so excess moisture evaporates.

Step 6

Add the butter, heavy cream, sour cream, minced garlic, remaining 1 teaspoon of salt, and black pepper to the potatoes.

Step 7

Mash the potatoes using a potato masher or electric hand mixer until smooth and creamy.

Step 8

Transfer the mashed potatoes to a greased 9x9-inch casserole dish, spreading them out evenly.

Step 9

Sprinkle the shredded cheddar cheese evenly over the top of the mashed potatoes.

Step 10

Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.

Step 11

Remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 12

Garnish with chopped fresh chives, if desired, and serve warm.
