Ingredients

  • 2 cups pumpkin puree
  • 2 tablespoons unsalted butter
  • 1 medium, diced yellow onion
  • 2 cloves, minced garlic
  • 3 cups vegetable stock
  • 1 cup heavy cream
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons ground ginger
  • 2 tablespoons maple syrup
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons, toasted (optional for garnish) pumpkin seeds

Directions

Step 1

In a large pot over medium heat, melt the butter until it begins to foam slightly.

Step 2

Add the diced yellow onion and sauté until softened and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 4

Add the pumpkin puree, vegetable stock, cinnamon, nutmeg, ginger, salt, and pepper. Stir well to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes, stirring occasionally.

Step 6

Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, transfer the mixture in batches to a countertop blender and return to the pot when fully blended.

Step 7

Stir in the heavy cream and maple syrup, and gently heat the soup until warmed through. Do not allow it to boil after adding the cream.

Step 8

Taste and adjust seasoning with additional salt or pepper as desired.

Step 9

Ladle the bisque into serving bowls and garnish with toasted pumpkin seeds if desired. Serve warm.
