Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized chunks, roughly 2-inch pieces, for even cooking.

Step 2

Place the potato chunks in a large pot and add enough cold water to cover the potatoes by 1 inch. Optionally, add the garlic cloves to the pot for a hint of flavor.

Step 3

Add 1 teaspoon of salt to the water and bring to a boil over medium-high heat. Reduce the heat to a simmer and cook the potatoes until they are fork-tender, approximately 15-20 minutes.

Step 4

While the potatoes are cooking, heat the heavy cream and butter in a small saucepan over low heat until the butter has melted and the mixture is warm. Do not let it boil; set it aside.
